There were only 9 bags harvested of this microlot and we are very proud to have secured all of them! Before being fully washed, Don Reyes had the beans ferment in a semi-wet tank for 32 hours before being washed then left out to dry on a patio for 11 days. Thanks to dry, hot winds that blow from Mexico’s Tehuantepec plain, the Highland Huehuetenango region is protected from frost, which allows for cultivation at extreme altitudes of beans with a fine intense acidity, full body and delightful wine and sweet peppercorn notes present in the cup.
